Swell Seaweeds sugar kelp is organically raised in the cold salty waters of Muscongus Bay, Maine.
The kelp is harvested in the late winter + early spring, while there is snow is on the ground but the days are sunny and above freezing. The farm is close to the mouth of Muscongus Bay, tucked in the lee of a large island that is undeveloped and has been in conservation for over 100 years. Seals and laughing gulls observe the winter harvest but keep their commentary to themselves.
Kelp has a salty, mineral flavor. It does not have a "seafood" flavor, but tastes of ocean waters. It is rich in what the Japanese call Umami-- the silky savory flavor of meat, cheese, tomatoes, mushrooms and fish.
It is tasty raw, toasted, lightly fried, cooked into sauces, soups and stews. You can sprinkle on salads, meats, potatoes, vegetables and seafood. You can bake it into breads, or even cookies as a salt replacement.
All humans from all continents have an ancient history of eating seaweeds. Sugar kelp is abundant with vitamins and minerals, containing Vitamin A, Vitamin C, Vitamin K, Vitamin E and Vitamin b12, magnesium, phosphorus, iodine, calcium, and iron.
